This recipe is called Harissa couscous on the BBC website but I didn't want the Moroccan Lamb I had made to compete with the couscous so I made up my own..
INGREDIENTS
1 x 400g packet of couscous
2 or 3 spring onions finally chopped
3 tbsp of mint - rolled into cigar and finally chopped
250g of cherry tomatoes - halved
400ml of lamb/ veggie or chicken stock - depending on preference
3 tbsp olive oil
1 lemon
METHOD
1. In a heatproof container (with a lid) place the couscous, spring onion, cherry tomatoes in and pour over hot stock. Cover and leave for 5 minutes.
2. USING A FORK fluff up the couscous and add chopped mint, olive oil and squeeze over the lemon juice.
3. Serve and enjoy!

PS. This would also be delicious in the summer with fresh fish, citrus chicken or barbecued steaks.
